I have been trying to eat more healthy this year. I’ve been doing pretty good, but I love food so sometimes my meal choices haven’t been too healthy. Anyway, this recipe was a gold mine. This recipe has all the things I love: garlic, cilantro, lime, & avocado. Even though there are specific amounts listed, don’t be afraid to add more. You better believe I add extra of garlic, cilantro, and lime to the salsa mixture. I wish I had bought some tomatoes, mainly because it would have added a bit more color to the dish.
My boyfriend can’t eat red meat for health reasons, so I am being a supportive girlfriend and not eating red meat too. However, burgers are one of my favorite foods, so… I cheat every once in awhile. Since I am trying to eat less red meat, I have found a love of ground turkey. So when I came across this recipe and saw that the recipe calls for basically all of my favorite things, I knew I had to try this.
I am not sure if it was supposed to be very juicy, but it did make my lettuce wraps a bit soggy. So, if you have a slotted spoon you can use that. But, if you eat it fast enough then no worries because those juices just add to the flavor.
