I have recently grown to like coconut chicken. So, I figured I’d see how much I would like it if I made it myself. Let me tell you, this is a pretty good recipe. These strips are a combo of sweet and spicy – with a little kick from the Sriracha and cayenne and the sweetens from the coconut. I chose to fry mine, which added a really great crunch. The sweet chili sauce sounded yummy as a dipping sauce, but unfortunately we did not have any. So, we decided to go with honey mustard.
